"I thought I would drop you a line to let you know how the tank mixing trial went.

We installed the mixer in one of our 250,000 litre tanks.

We determined the efficacy of the mixing by making an addition to the top of the tank and then continually taking sampling from both the top and the bottom and analysing until both values are equivalent.

Using this method we have determined that our tanks with agitators take about 35 to 40 minutes to mix completely.

Using the Pulsair system we found that in each of our trials that the addition was completely mixed in less than four minutes.

"Monterey Wine Company has chosen to equip the majority of our red fermentation tanks with Pulsair cap management systems.  Wines made in these tanks have had similar phenolic and anthocyanin profiles to wines made with common sump and irrigator programs.  We feel Pulsair creates a non-reductive environment that encourages sulphide-free, dry wines. "One parcel of fruit was split across two static fermenters, one of which received only traditional pumpovers, the other only received Pulsair.  We kept aside two barrels of each for trial purposes, the rest was blended away.
